While it is traditional to eat corned beef, cabbage, and potatoes for St. Patrick’s Day, the following are some delicious Irish-influenced snacks, perfect for celebrating this holiday.

Shamrock Shake

This classic dessert, while in no way originating in Ireland, has become a staple of St. Patrick’s Day. It is fun and easy to make and well-fitting for any of your Irish festivities. To make it, just add one cup of slightly thawed vanilla ice cream, ½ cup of milk, 1/8 teaspoon of mint extract and four to five drops of green food coloring into a blender. For 30 to 40 seconds blend the ingredients together at medium speed and enjoy. For added flavoring and texture, crumble in about three Oreo cookies.

Rock Shandy

This drink is easy to make, but its contents can be difficult to find. In the pubs of Ireland this is probably the only non-alcoholic drink they offer, and once you taste it you’ll know why it’s so popular. Pour a cup half full with orange flavored soda (Fanta is a very good choice) and fill the rest of the cup with lemon flavored soda (this can be found at Trader Joe’s with their Italian sodas). Simply mix the two sodas and enjoy a drink that is refreshing and tasty.

Shamrock Cookies

Another American creation, these shamrock shaped cookies are great for celebrating the old Irish holiday. To make, simply mix and cream one cup of butter and one cup of sugar. Add one egg and mix until smooth. Add three cups of flour and ½ teaspoon of salt. Use a roller to flatten the dough into a thin sheet and use a four-leaf clover shaped cookie cutter to cut out your cookie shapes. Put the pieces on a pan and bake at 350 degrees until the edges start to turn brown. Alternatively, you can get any sugar cookie dough from the grocery store and cut it into shamrock shapes. When the cookies are finished, decorate them however you like with green icing and sprinkles. Making and decorating these cookies is a great activity to do with your friends or family on this very special day.
